About Callaloo

Specialty greens with 3–5" leaves are sweeter than spinach. Diced or shredded they are eaten steamed for breakfast, lunch, or dinner, or used in many popular tropical dishes such as Jamaican pepperpot. The young shoots are edible, too. Rich in nutrients. Self-seeds.

About Amaranth

Tasty cut-and-come-again greens can be eaten like spinach. If you fertilize, use only organic fertilizers, since a high level of nitrogen will concentrate nitrates in the leaves.
