Specialty greens with 3–5" leaves are sweeter than spinach. Diced or shredded they are eaten steamed for breakfast, lunch, or dinner, or used in many popular tropical dishes such as Jamaican pepperpot. The young shoots are edible, too. Rich in nutrients. Self-seeds.

About Amaranth

Tasty cut-and-come-again greens can be eaten like spinach. Use only organic fertilizers or none, because amaranths will concentrate harmful nitrates in the leaves and possibly in the seeds.
