45 days. Grown for its abundant, edible purple seed pods and not for its roots. Small white flowers tinged with violet are followed by 12” long pods. Most tender if picked about 6” long, the pods add a peppery tang to stir fries, salads, or as pickles. They lose their purple color on contact with vinegar. For ease of picking, grow on a trellis or tomato cage.
