Large carrot-like roots are pure white with shoulders that turn green as they push out of the ground and are exposed to light. 2–6-pound roots live up to their Japanese name which means "big root." Used in pickling, fermenting, Asian salads, and stir fries. If left to bolt, will provide volunteers the following year.

Can be planted in bulk as a cover crop providing forage for deer and cattle, breaking up heavy clay-like soils, and bringing nitrogen up to the soil surface for next year’s crops.
